Every city keeps a second list
It isn’t on any app. It lives in the head of the weirdo you met at a dive bar last weekend, the line cook on a smoke break, and that one cousin who somehow always knows a guy who knows a place.
That list is the good one. The nine-stool noodle counter where you wait on the sidewalk with a menu. The bakery that’s sold out by nine. The bar that was pouring long before anybody thought to review it.
The Unlisted is that list, written down, for people who’d rather eat well than eat famous. We take our cue from Anthony Bourdain: show up hungry, order what the regulars order, talk to whoever’s behind the counter, and be a good guest.
Search engines and review sites rank what’s already popular. We go the other way. A person picks and checks every place. AI does the legwork: reading what’s been written, drafting the story, and flagging anything we couldn’t confirm. Then a human decides whether it gets in.
Not everything gets in. That’s the point.
